Separate the storage cabinet from the prep rail
On a refrigerated prep table, the ingredient area and lower storage cabinet may behave differently. Reporting which area warms first helps focus the assessment. Loading, lids, airflow, seals and controls all need to be considered alongside the cooling components.
Busy-line wear and cooling faults
Frequent opening puts doors, hinges, slides and gaskets into daily use. Poor closure can add to the cooling load. An inspection may include those parts, condenser and evaporator airflow, fans, sensors, drains and defrost components where fitted.
